Trong khuôn khổ chương trình, các tiến sĩ, giảng viên Đại học Đông Á và sinh viên, nghiên cứu sinh Đại học Brown đã cùng tham gia các hoạt động trao đổi học thuật, thảo luận văn hóa và chia sẻ trải nghiệm về lĩnh vực ẩm thực.

Thông qua những cuộc đối thoại cởi mở, hai bên đã có cơ hội tìm hiểu sâu hơn về nền ẩm thực, phong tục, tập quán, truyền thống và những giá trị văn hóa đặc trưng của Việt Nam.

Điểm nhấn của chương trình là phần chia sẻ về “Ẩm thực Việt Nam qua các vùng miền và thời gian” do TS. Trần Đức Anh Sơn – Trưởng phòng Quản lý Khoa học Trường Đại học Đông Á trình bày.

Từ những câu chuyện lịch sử, địa lý đến dẫn chứng văn hóa đặc sắc, bài chia sẻ đã đưa người xem khám phá hành trình phát triển của ẩm thực Việt Nam gắn liền với điều kiện tự nhiên, đời sống xã hội và bản sắc ba miền Bắc – Trung – Nam. Đặc biệt, nội dung về ẩm thực cung đình Huế đã thu hút sự quan tâm của các sinh viên quốc tế khi tái hiện lại những nét tinh hoa trong nghệ thuật chế biến, trình bày món ăn, thưởng thức và những giá trị văn hóa được lưu giữ qua nhiều thế kỷ ở vùng đất cố đô.

Không dừng lại ở đó, chương trình còn mở rộng thành không gian trao đổi học thuật sôi nổi về các lĩnh vực văn hóa và lịch sử, tập trung thảo luận mối quan hệ giữa ẩm thực với cấu trúc xã hội, truyền thống cộng đồng và tiếp biến văn hóa Việt – Chăm trong tiến trình phát triển của dân tộc. Những câu hỏi từ các sinh viên, nghiên cứu sinh Đại học Brown đã góp phần tạo nên cuộc đối thoại đa chiều, giúp người tham dự hiểu sâu hơn về cách ẩm thực phản ánh đời sống xã hội cũng như bản sắc văn hóa của mỗi quốc gia.

Giảng viên Phan Văn Mạnh – Khoa Du lịch Đại học Đông Á cho biết: "Đại học Đông Á luôn coi trọng các hoạt động giao lưu và hợp tác quốc tế như một cầu nối để chia sẻ tri thức, lan tỏa giá trị văn hóa Việt Nam và tăng cường kết nối học thuật với các trường đại học trên thế giới. Buổi thảo luận là cơ hội để tăng cường giao lưu học thuật, chia sẻ những góc nhìn đa văn hóa về ẩm thực Việt Nam với bạn bè quốc tế."

Chương trình giao lưu học thuật với đoàn sinh viên, nghiên cứu sinh Đại học Brown tiếp tục khẳng định định hướng quốc tế hóa giáo dục của trường Đại học Đông Á. Với mạng lưới hợp tác ngày càng mở rộng cùng nhiều hoạt động giao lưu học thuật, trao đổi văn hóa và kết nối quốc tế được tổ chức thường xuyên, Đại học Đông Á đang tạo ra môi trường học tập năng động để sinh viên phát triển toàn diện, trau dồi năng lực văn hóa và khả năng thích ứng để tự tin trở thành công dân toàn cầu trong kỷ nguyên hội nhập.

Brown University (USA) Students and Graduate Researchers Explore “Vietnamese Cuisine Across Regions and Through Time” with Dong A University Scholars

On June 27, Dong A University hosted an academic exchange program with a delegation of students and graduate researchers from Brown University (USA) under the theme Vietnamese Cuisine Across Regions and Through Time.

As part of the program, doctoral scholars, lecturers from Dong A University and students and graduate researchers from Brown University participated in a series of academic exchanges, cultural discussions and experience-sharing sessions focusing on Vietnamese cuisine.

Through open and engaging dialogue, participants from both institutions had the opportunity to gain deeper insights into Vietnamese cuisine, customs, traditions and the distinctive cultural values that shape the country.

A highlight of the program was the presentation titled Vietnamese Cuisine Across Regions and Through Time, delivered by Dr. Tran Duc Anh Son, Head of the Office of Science Management at Dong A University.

Drawing on historical narratives, geographical perspectives and rich cultural examples, the presentation guided participants through the evolution of Vietnamese cuisine, illustrating how it has been shaped by natural conditions, social life and the unique identities of the country's three major regions: the North, Central and South. In particular, the section on Hue royal cuisine attracted great interest from the international students by showcasing the sophistication of royal culinary techniques, food presentation, dining customs and the cultural heritage that has been preserved in the former imperial capital for centuries.

Beyond the culinary discussion, the program evolved into a lively academic forum on Vietnamese culture and history. Discussions explored the relationship between cuisine and social structure, community traditions and the cultural exchange between Vietnamese and Cham civilizations throughout the nation's historical development. Thought-provoking questions raised by Brown University students and graduate researchers enriched the dialogue, enabling participants to gain a deeper understanding of how cuisine reflects both social life and the cultural identity of a nation.

Lecturer Phan Van Manh from the Faculty of Tourism at Dong A University shared: "Dong A University places great importance on international exchange and collaboration as a bridge for sharing knowledge, promoting the cultural values of Vietnam and strengthening academic connections with universities around the world. This discussion provided a valuable opportunity to enhance academic exchange and share multicultural perspectives on Vietnamese cuisine with our international friends."

The academic exchange program with the delegation from Brown University further reaffirmed Dong A University's commitment to the internationalization of education.
